Established in the summer of 2001 in Blowing Rock, North Carolina, Canyons is the result of many years in the making. Bart Conway, who opened the very popular Tumbleweed Restaurant in Boone and which later became Cottonwood Brewery, acquired The Emporium Restaurant in Blowing Rock to continue what has become a High Country tradition... casual fine dining in a unique atmosphere with a seemingly endless selection of cuisine. Before its eight-year span as The Emporium, the building was home to Holly's Tavern, a well-established gathering place for friends to meet and enjoy a sandwich, a few beers, and an unparalleled view of the gorge and Grandfather Mountain. Canyons is the culmination of all these previous efforts. Join us for some eclectic cuisine, a few drinks, live entertainment, and enjoy our fantastic view.

All dishes are freshly prepared in house with the finest ingredients available. We regularly offer a variety of seasonally fresh items, so ask about our nightly specials in addition to our menu selections. If you have a special request, please let us know. We offer a diverse selection of domestic and imported wines and beers chosen to complement our menu. Our Mexican and Southwestern dishes are prepared with a varying degree of spice and heat. Please tell your server your preference.

Best Practice Highlights

Canyons makes an ongoing effort to be environmentally conscious. We began several years ago with the move toward using fluorescent lighting to conserve energy. Since, the effort has expanded to include converting the building's heating system to utilize used fryer oil to heat the air and water, and the use of compostable cups and to-go boxes. Some of our efforts save money while some others cost considerably more... but it's all worthwhile to conserve energy and help to preserve our environment. The most recent effort has been to start replacing kitchen equipment with more efficient units; the new grill which uses 50% less energy than the unit it replaced. Canyons has also been the first in the area to use paper, molded fiber and plastic products necessary to conserve water during our recent drought. Although presentation is not as nice as when we are able to use china, it's all for the greater good. We're always open to your suggestions as to how we can do more!

Based on the level of performance, a participating business is awarded a Level of Green Excellence ranking of one, three, or five stars. Certification is valid for two years.

In order to achieve the level of 1, Canyons Blowing Rock acquired a minimum of 45 points.
